Behind a storefront window in a lonely Urbana strip mall, lies a magical land of pretty princess cakes, rosemary and garlic focaccia, dripping mousse cakes, and fresh raspberry tarts - all made at the hands of Ricardo Carrillo.
Rick started baking 18 years ago in Oaxaca, Mexico when he was 13 years old. He learned from his grandparents and has enjoyed baking ever since. He enjoys it so much he arrives at his store at one in the morning six days a week to begin baking 15 different kinds of bread, 30 plus varieties of cake and 50 selections of pastries.
Carrillo started working in a bakery 16 years ago and learned his skill there, but later went to a culinary school in Los Angeles to get a diploma and perfect his technique. He moved to Champaign-Urbana about seven years ago to be close to family in the area, and decided to open his own bakery in early 2012.
All recipes are made from scratch and inspired by baked delights from around the world. Carrillo's Mexican heritage is embodied in the tres leches cake, a light, moist sponge cake soaked in three milks.
